Avocado Tuna Salad
I love a good tuna salad but I'm really not a mayonnaise fan. Swap the mayo out for avocado, though, and problem solved! Eat it on toast (hello avocado toast!), or eat it: with crackers, in a sandwich, as part of a salad, or in a wrap. It's versatile! Easy! Green!
1 teaspoon fresh squeezed lemon juice
1 can tuna, drained (preferably something like this, that's not evil & destroying sea creature populations)
1/4 small red onion, chopped
1/2 jalapeño, finely chopped
Salt and pepper, to taste
Aleppo pepper, for sprinkling
In a medium bowl, roughly mash avocado and lemon juice (it's ok/better if it's not completely smooth!). Add tuna, onion, and jalapeño and mix. Add salt and pepper to taste.
Serve atop toast, in a wrap, a sandwich, etc. Sprinkle with Aleppo for a little kick!
